Minoru Farm is a Brighton, Colorado farm founded by Jade Sato, a fourth-generation Japanese American farmer. Named after her grandfather who settled in Colorado after World War II, the farm uses low-till, organic methods to grow Asian-inspired vegetable varieties including bitter melons, Asian cucumbers, eggplants, and herbs for the Denver community.
